This 3-hour course covers the fundamental skills of sharpening knives by hand on waterstones and stropping on leather to a razor edge. This course is aimed at beginners and no prior experience is needed. Sharpening is an incredibly useful life skill that everyone can learn. However, without the right knowledge and techniques, trying to sharpen knives can be frustrating and, at worst, damage your knives. But, with the right instruction anyone can achieve results fairly quickly. The course covers more than just the practical aspects of sharpening. You will learn the basics of how different steels, heat treatment and edge geometry all effect the performance of your blade. You will gain a better understanding of what makes a good knife, what to look for when buying knives and most importantly, how to maintain your knives for life. You will leave with the knowledge and equipment needed to continue honing your skills. Once you know the basic principles, you can apply it to many other edged tools to become self sufficient and reduce the need to be a ‘throw away’ consumer when your tools are no longer cutting. NOTE: This is an in-person class. You will need to be able to travel to my workshop in Westlake, Brisbane to participate on the day. Minimum age: 15-years old. Anyone under 18-years old must be accompanied by a legal guardian. *No spectators - except for Legal Guardians accompanying minors. Guardians do not need to book a separate place unless they also want to participate. Included in the course: • Waterstone – dual sided 400-1000grit • Leather strop with diamond compound for honing the edge. *These will both be yours to keep. What to bring: • 2-3 of your own kitchen knives – We’ll concentrate on sharpening just one but it’s good to have a few options and if you’re going well you may get through a couple. • Comfortable clothes. Shorts and t-shirt is fine. • You must wear closed toe shoes • Water bottle • Coffee – you are welcome bring your morning coffee with you.
